LACA Grab & Go finalist spotlight: Angela Senyo

Angela Senyo, from Childeric Primary School (Chartwells) in London, advanced to the LACA Grab & Go national final after competing against six other chefs at the cook-off in Leeds.

Chefs were tasked to cook four portions of a grab & go meal or breaktime savoury snack with a total cost per head of 60p (to include food costs and serving item- box, cone, paper wrapping).

In the final Angela will cook cheesy Quorn Mexican muffin with charred corn and fresh tomato relish. The grab and go item aims to take the ever popular sweet muffin into a new, colourful, spicy and healthy direction.

Angela said: “I regularly speak to the pupils at lunchtime about trying new flavours and dishes as well as talking to them about their favourite foods. While developing this recipe I combined one of their favourite sweet cakes, a muffin, with their love of spicy food.

“I also held taster session with the school council and the headteacher who gave the recipe a massive thumbs up and liked the clever way things like Quorn and sweet potato where hidden in the muffin mix. Pupils and teachers alike now want to know when it will be on menu.”
